There is a rule of thumb for ice machines which is half a kilo of ice per customer for restaurants. However, this will vary depending on your particular business model. Cocktail bars and hotels will require more than per customer than a café.
The amount of kilograms an ice machine produces is a measurement over 24 hours and at an ambient water temperature specified. This temperature varies between manufactures so take this into consideration. A machine that produces 50kg per day in Hobart will likely produce considerably less than that in Darwin.
